The salumi counter run by the Bergamaschi family has been a fixture for three generations — ask for a slice of salame di Varzi DOP, the local cured meat from the Apennine valleys to the south, and you'll understand why Pavesi are loyal to it.
Seasonal produce is the real show: in autumn, porcini and ovoli mushrooms pile up in wicker baskets; in spring, white asparagus from Cilavegna arrives bundled in newspaper. The vendors know their provenance and are happy to talk if you make the effort.

Arrive before 9 am to see the market at full tilt, when restaurateurs jostle with grandmothers for the best cuts. A bar on the market's edge serves espresso and warm focaccia to the traders — join the standing crowd at the counter for an authentically Pavese breakfast.
The market winds down by early afternoon and is closed on Sundays, so plan accordingly. A short walk south brings you to Via Luigi Porta, lined with delis and wine shops where you can continue the culinary exploration.
