What to buy and eat

The Aube is serious andouillette country, and you will find several charcutiers here selling the real thing alongside rillettes, smoked lard and air-dried sausages that travel well in a cool bag. Pick up a ficelle (a thin local baguette variant) from the bread stall near the fountain to eat with them on the spot.

Seasonal vegetables from market gardeners in the surrounding villages tend to be cheaper and fresher than anything in the supermarkets: look for asparagus in May, mirabelle plums in August and fat cabbages and root vegetables through autumn and winter.

Cheese and local drinks

A fromagerie van usually parks near the church side of the square, stocking Chaource — the soft, creamy AOC cheese produced just 40 km south of Nogent — at prices well below Paris deli rates. It pairs perfectly with a glass of Champagne or the underrated still wines of the Côte des Bar.

Ask the cheese vendor about affinage: a younger Chaource is mild and milky; an older one develops a wrinkled rind and a slightly mushroomy depth. Buy both and hold a tasting at your accommodation.
