Restaurante El Castillo (Monzón)

Sitting at the foot of the castle hill, this long-established local restaurant has built its reputation on honest Aragonese cooking — slow-braised lamb, salt-cod al ajoarriero and the region's celebrated ternasco — served in a stone-walled dining room that feels entirely appropriate to its surroundings.

What to order

Start with the ensalada de boquerones y pimientos del piquillo, a simple combination of white anchovies and roasted peppers that showcases the quality of the ingredients rather than the cleverness of the cook. Follow it with ternasco de Aragón IGP — milk-fed lamb roasted in a wood oven until the skin crackles and the meat falls from the bone.

The house wine list leans heavily on Somontano DO bottles from nearby Barbastro, and the staff are genuinely enthusiastic about pairing. Ask for a glass of Enate Crianza with the lamb and you will not regret it.

The rhythm of a Spanish lunch

Like most serious Spanish restaurants, El Castillo operates on the long-lunch model: the kitchen fires up at 13:30 and the last orders for the menú del día are taken around 15:30. The fixed lunch menu — typically three courses, bread, wine and coffee — represents extraordinary value for the quality on the plate.

Book ahead for Sunday lunch, when extended Aragonese families fill every table and the noise level rises pleasantly. The terrace at the rear opens in warm weather and looks directly up at the castle walls — a view that improves every dish.
