La Cevichería

Made internationally famous when Anthony Bourdain filmed here for Parts Unknown, La Cevichería on Calle Stuart in the Walled City has earned its reputation honestly — the ceviches are bright, precise, and built on the freshest Caribbean seafood available that morning from Bazurto market. It is small, always busy, and worth every minute of the wait.

What to order

The ceviche de camarón y coco — shrimp marinated in citrus and coconut milk, finished with ají chombo and crispy tostones — is the dish that made the restaurant's name and remains the single best thing on the menu.

The leche de tigre, served as a shot on the side, is intensely savoury and bracingly cold; locals swear by it as a hangover cure, and after one sip you'll understand why the legend persists.

For a full meal, follow the ceviche with the arroz con mariscos, a saffron-tinted rice loaded with octopus, clams, and shrimp that demonstrates head chef Jorge Escudero's ability to elevate a regional classic without losing its soul.

Atmosphere and logistics

The restaurant occupies a narrow colonial building with just a handful of tables; the open kitchen runs the length of one wall and the energy is focused, fast, and genuinely fun to watch.

Reservations are accepted and strongly recommended for dinner; lunch walk-ins are possible but expect a 20–40 minute wait during peak season (December–March and July–August).

The wine list is short but well-chosen for tropical food; the house-made limonada de coco, however, is the drink that actually belongs here — cold, creamy, and perfectly calibrated against the heat of the ají.
