Ristorante Milanese – Trattoria del Nuovo Macello
Tucked behind a nondescript door on Via Cesare Lombroso in Milan's working-class Corvetto district, Trattoria del Nuovo Macello is the kind of place that has been serving the same magnificent risotto alla Milanese since 1928 — and has no intention of changing anything.
What to Order
The risotto alla Milanese — saffron-gilded, stirred to a loose, flowing consistency the Milanese call all'onda — is the non-negotiable opener. It arrives in a wide shallow bowl, trembling slightly, with a knob of butter melting on top. Follow it with the ossobuco in gremolata, the braised veal shank that is its traditional partner, and you have eaten Milan in two courses.
The cotoletta alla Milanese — a bone-in veal cutlet hammered thin, breaded and fried in clarified butter until golden — is equally essential. It should be the size of a dinner plate and slightly crisp at the edges. Here, it is exactly that.
The Room & the Ritual
The dining room is all checked tablecloths, framed newspaper cuttings and the low murmur of regulars who have been coming for decades. There is no background music. The waiters are efficient and dry-humoured in the best Milanese tradition.
Book at least a week ahead for Friday and Saturday evenings. Lunch on a Tuesday or Wednesday is more relaxed and gives you a better chance of a table near the kitchen, where you can watch the risotto being stirred in real time.
