Osteria del Passarino

Tucked into a vaulted room on Via Lodivecchio, Osteria del Passarino has been feeding Lodi's farmers, lawyers and market traders since the 1970s and refuses to update its formula: a handwritten menu that changes with the season, a wine list heavy on Oltrepò Pavese reds, and a risotto al Granone Lodigiano that is arguably the finest expression of this cheese you will eat anywhere. What to Order

Start with the affettati misti, which always includes Salame di Varzi and a local bresaola cured in-house, then move to the risotto — stirred to a flowing 'all'onda' consistency and finished with aged Granone that adds a nutty, slightly grainy depth that Parmigiano cannot quite replicate.

In autumn, the pappardelle with hare ragù and the braised beef cheek with polenta are the dishes regulars come back for; in spring, look for the asparagus and Pannerone tart that appears as a starter for a few weeks only.

The Room & the Vibe

The dining room seats about 35 under a low brick vault strung with old copper pots, and the noise level at lunch on a Saturday — farmers in from the market, families celebrating, a table of retired men arguing about football — is exactly the kind of joyful chaos that makes Italian trattoria culture irreplaceable.

Service is brisk and maternal; the owner will tell you what to eat if you hesitate, and she is always right.
