A short drive from Las Rozas town centre on the road toward Torrelodones, El Rancho de la Aldegüela has been feeding the Madrid region's appetite for wood-fired Castilian roasts for decades — the kind of restaurant where the oven is the star and the menu is gloriously, unapologetically short.
What to Order
The cochinillo asado (roast suckling pig) and lechazo (milk-fed lamb) are both cooked in a traditional clay-brick horno de leña and arrive at the table with crackling skin that shatters at the touch of a plate edge — the classic Segovian test of a proper asador.
Start with the judiones de La Granja, enormous white beans from the Royal Site of La Granja stewed with chorizo and morcilla, a dish that is simple, ancient and deeply satisfying.
The Setting
The dining room has the warm, slightly rustic character of a country house — exposed stone, heavy wooden beams and the faint, appetising smell of woodsmoke that clings to the air long after you've sat down.
In summer, the shaded terrace is the place to be; in winter, a table near the open kitchen lets you watch the whole theatre of the roasting oven at close range.

Weekend lunches — the sacred Spanish sobremesa meal that stretches from 2 pm to 5 pm — fill up fast, particularly on Sundays when extended family groups dominate every table.
