Perched inside a restored 15th-century villa on the slope between Florence and Fiesole, Il Salviatino's terrace restaurant serves refined Tuscan cuisine against a backdrop of terraced gardens, olive groves and the city below — a combination that makes even a simple ribollita feel like an event.
What to order
The kitchen leans on hyperlocal sourcing: pici pasta with wild boar ragù from the Mugello hills, bistecca from Chianina cattle aged in-house, and olive oil pressed from the estate's own trees. The ribollita — Tuscany's hearty bread-and-cavolo nero soup — is among the most carefully made versions you'll find anywhere near Florence.
For a lighter option, the antipasto board of cured meats, aged pecorino and honey with a glass of Chianti Classico is a perfect long-lunch opener. Desserts lean seasonal: chestnut semifreddo in autumn, strawberry panna cotta in late spring.
The setting and booking advice
The terrace is shaded by a 200-year-old wisteria that blooms purple in late April — if your visit coincides, book immediately. Even without the wisteria, the view of Florence's Duomo hovering above the olive trees is reason enough to linger over a second glass of wine.
Reservations are strongly recommended for dinner and weekend lunch. The hotel also runs a more casual poolside bar in summer where you can order a plate of affettati and a Negroni without a full restaurant commitment.
