What to Order
Start with a tagliere of local salumi — the culatello here comes from a producer in nearby Zibello and is silky, faintly sweet, and deeply perfumed with the Bassa Parmense fog that cures it. Pair it with gnocco fritto, the pillowy fried dough that is the region's finest vehicle for cured meat.
For primi, the anolini in brodo is the definitive Fidenza dish: small stuffed pasta rings bobbing in a golden capon broth that takes two days to make. In truffle season (November–January), the tagliatelle al tartufo nero sourced from the Apennine foothills is equally unmissable.
The Wine and the Atmosphere
The house Fortana — a slightly fizzy, deeply ruby red wine from the Bassa Parmense — is served in a small ceramic jug and is precisely the right accompaniment to rich, fatty salumi. Do not let its humble presentation fool you; this is a serious local wine tradition.
The dining room is panelled in warm chestnut, the tables are covered in paper over linen, and the noise level rises cheerfully as the evening progresses. It feels like eating in someone's home, because in spirit it is.
Dessert and the Bill
Finish with a slice of torta di riso — a dense, eggy rice tart that is the traditional dessert of the Parma province — or a scoop of local gelato if the kitchen has made it that day. The bill for a full three-course meal with wine rarely exceeds €30 per person, which in 2024 feels almost implausibly good value.
