Sobrino de Botín
Guinness World Records certified as the world's oldest restaurant in continuous operation since 1725, Botín is not a tourist gimmick — it's a wood-fired institution where Castilian roast suckling pig (cochinillo asado) emerges from the same 18th-century oak-burning oven that has never once been extinguished in three centuries.
What to Order
The cochinillo asado — a whole quarter of milk-fed suckling pig, roasted until the skin crackles like thin porcelain — is the only dish you need to think about. It is served with nothing but its own juices and a simple salad, and the waiter will theatrically cut it using only a plate to prove how tender it is.
The roast lamb (cordero asado) runs the cochinillo close and is equally superb. Start with the sopa castellana — a garlicky bread soup topped with a poached egg — which has been on the menu since the restaurant opened.
Botín's house Ribera del Duero red wine is a solid, well-priced match for the roast meats. The restaurant has its own wine cellar in the medieval basement where Ernest Hemingway famously dined and set the closing scene of The Sun Also Rises.
The Setting
The building spans four floors of a narrow 18th-century townhouse on Calle Cuchilleros, just off Plaza Mayor. The ground-floor dining room with its azulejo tiles and low brick arches is the most atmospheric; the basement cave is where Hemingway sat and is the most photographed.
Despite the fame, the service is professional and unhurried — this is not a place running on its reputation alone. The kitchen takes the food seriously, and the suckling pig justifies every cent of its price.
Booking & Practicalities
Reservations are essential, especially for Friday and Saturday dinners — book via the restaurant's own website at botin.es at least two weeks ahead in high season. Walk-ins at lunch on weekdays are occasionally possible.
Lunch service runs 1–4 pm, dinner 8 pm–midnight. A full meal with wine runs €50–70 per person — expensive by Madrid standards but reasonable for what is, genuinely, a once-in-a-lifetime dining experience.
