Winstub Le Caveau Saint-Pierre
A winstub is Alsace's answer to a cosy neighbourhood wine bar crossed with a hearty bistro, and Le Caveau Saint-Pierre — tucked into a 16th-century vaulted cellar right on the La Petite Venise canal — is one of the most authentic in Colmar. The menu is a love letter to the region: choucroute garnie, baeckeoffe, and house-made foie gras alongside a tightly curated list of Alsatian Riesling and Pino
What to order
The choucroute garnie — a mound of slow-braised sauerkraut buried under smoked pork belly, Strasbourg sausage and salted knuckle — is the definitive version of Alsace's most iconic dish. It arrives in a copper pot and is sized for serious appetites; share it between two if you want room for the kougelhopf (a buttery, raisin-studded ring cake) that arrives with coffee.
Baeckeoffe, the slow-cooked casserole of pork, lamb, beef and vegetables sealed in wine-laced stock, is only available on certain days and requires advance notice — ask when booking. It's worth planning your visit around.
The atmosphere and the wine
Stone walls, low vaulted ceilings, candlelight and the murmur of French conversation give the room a genuine medieval warmth that no amount of interior design could manufacture. The terrace overhanging the Lauch river is the place to be on warm evenings — reserve it specifically when you book.
The wine list is proudly local: ask the staff to guide you through the difference between a Riesling from the Haut-Rhin and a Pinot Gris from a Grand Cru vineyard. They know their list and enjoy the conversation.
