What to Order

Start with oeufs en meurette — poached eggs in a deep, wine-dark sauce of Pinot Noir, lardons and pearl onions — arguably the definitive Burgundian starter. Follow with a daube de boeuf Charolais braised until the meat yields at a glance, or the pan-fried frogs' legs with garlic and flat-leaf parsley if the season is right.

Dessert should be a slice of tarte aux cassis (blackcurrant tart) made with Burgundy's own Cassis de Dijon berries. The flavour is more intense and less sweet than you expect, and it pairs beautifully with a small glass of Marc de Bourgogne.

The Wine List

Ma Cuisine is as celebrated for its cellar as its kitchen. The list runs to hundreds of Burgundy references, including mature village and premier cru bottles at prices that would be considered bargains anywhere else in the world. The staff are knowledgeable without being intimidating — ask for a recommendation by style and budget and they will steer you well.

Lunch is the smarter choice: a two-course formule is typically around €28, and the dining room fills with winemakers and négociants from the surrounding Côte d'Or, which is the most reliable sign of quality you could ask for.
