Schlenkerla Rauchbierbrauerei
Schlenkerla is not just a pub — it is the living origin story of Rauchbier, a smoked malt beer unique to Bamberg that tastes like someone dissolved a campfire into a very good dark ale. The brewery has operated continuously since 1678 and the half-timbered tavern on Dominikanerstraße is the only place to drink the Märzen straight from a gravity-fed oak barrel.
The Beer and the Barrel
Bamberg's signature Rauchbier (smoked beer) gets its flavour from malt dried over open beechwood fires — a technique abandoned almost everywhere else in Germany by the 19th century but kept alive here without interruption. The flagship Schlenkerla Märzen pours a deep mahogany with a tan head and delivers an assertive smoke on the nose that softens into chocolate and caramel on the palate.
The tavern taps the beer directly from wooden barrels set behind the bar, and regulars insist the first sip is always the most startling — by the second glass most visitors are converts.
Food and the Full Experience
The kitchen is unapologetically Franconian: expect Schäufele (slow-roasted pork shoulder with crackling), Zwiebelkuchen (onion tart), and dense rye bread. The smoked-beer braised meats are a logical pairing and the portions are generous enough to constitute a full meal.
Book a table for dinner on weekends — the low-ceilinged rooms fill fast and standing at the bar, while atmospheric, gets crowded by 19:00. The courtyard opens in warmer months and is slightly quieter than the interior.
