Mercado Semanal de Alsasua

Every Tuesday morning the main square of Alsasua fills with stalls run by producers from the Sakana valley and the surrounding sierras — this is where you find Idiazabal cheese direct from the shepherd, Navarrese white asparagus in season and vegetables that were still in the ground the day before.

What to Look For

The cheese stalls are the centrepiece: look for wheels of smoked and unsmoked Idiazabal at various stages of curing — younger wheels are mild and buttery, while the longer-aged ones develop a sharp, almost nutty bite that pairs brilliantly with a glass of Navarrese rosado.

In spring (late April through June) the white asparagus from the Ebro valley lowlands arrives in thick, ivory bundles — locals buy them by the kilo and eat them boiled with nothing but olive oil and salt, and they are right to.

Dried peppers, honey from the Urbasa hives, and fresh herbs foraged from the sierra round out a market basket that could stock a very good picnic.

The Market Rhythm

Stalls are set up from about 08:30 and most producers pack away by 13:30, so arriving before 10:00 gives you first pick and the chance to chat with sellers who are genuinely proud of what they grow.

The surrounding cafes fill up mid-morning with farmers taking a coffee break — pull up a stool and you are immediately part of the weekly social ritual that has structured life in this valley for generations.

The market is small enough to cover in 30 minutes but easy to linger in for two hours if you let conversations and tastings unfold naturally.
