Restaurante El Corregidor

On a quiet street just off the Plaza Mayor, El Corregidor has been feeding locals and discerning visitors since the 1970s with an unashamedly traditional Manchegan menu that refuses to chase trends. The dining room, with its exposed stone walls and dark timber beams, sets the tone for food that is hearty, honest and deeply satisfying.

What to order

Start with a plate of berenjenas de Almagro drizzled with local olive oil — the kitchen sources them from a producer in the Campo de Calatrava and they arrive at the table still faintly warm from the brine. Follow with the pisto manchego, a slow-cooked ratatouille of courgette, pepper and tomato topped with a fried egg and served in a terracotta dish.

For a main, the migas manchegas — breadcrumbs fried with garlic, chorizo and panceta until golden and crisp — is the dish that divides first-timers and converts them forever. The roast lamb (cordero asado) slow-cooked in a wood-fired oven is equally essential and worth ordering 24 hours in advance.

Wine and atmosphere

The wine list leans heavily on Valdepeñas DO, the local denomination whose vineyards begin just 15 km north of town. Ask the waiter to recommend a crianza from one of the smaller family bodegas — the prices are remarkably fair for the quality.

Lunch is the main event in Almagro as in all of Castilla-La Mancha; arrive at 14:00 and the room fills quickly with local families and workers. The set lunch menu (menú del día) at around €14 is one of the best-value meals in the region.
