What to order

Start with a uitsmijter — the Dutch open sandwich of fried eggs, ham and aged Gouda on thick white bread — which is far better here than in any Amsterdam tourist-strip café. Pair it with a glass of Texels Skuumkoppe, the creamy wheat beer brewed on the nearby Wadden island of Texel.

For lunch, the erwtensoep (Dutch split-pea soup) served from October to March is thick enough to stand a spoon in and comes with slices of rookworst sausage from a local butcher in the Langestraat.

The cheese board, assembled from a rotating selection of Noord-Holland farmhouse Goudas at different ages, is worth ordering at any time of day.

The atmosphere

The interior has exposed brick, low timber beams and a bar worn smooth by decades of elbows — no renovations have been allowed to interfere with the patina. On Friday market days it fills with cheese traders and locals from mid-morning.

In summer, a small terrace opens directly onto the Houttil canal, where you can watch narrow boats navigate the lock while eating.

Finding it and timing your visit

The café is on Houttil, a short walk north from the Waagplein along the canal. Look for the painted golden fleece sign above the door.

Arrive early on Friday market days (before 12:30) or expect a wait; weekday lunches are considerably calmer and the kitchen is equally attentive.
