What to buy

The cheese stalls are the undisputed stars: look for wheels of Beaufort d'Alpage with the telltale concave rind, creamy tomme de Savoie and the pungent, washed-rind Époisses-style Abondance that locals buy by the wedge.

Charcuterie vendors sell diots — the classic Savoyard pork sausage — alongside dried mountain ham and thin-sliced bresaola-style viande des Grisons, all perfect for a picnic lunch up at Conflans.
