Restaurante Nuestro Bar
On Calle Alcalde Conangla in central Albacete, Nuestro Bar has been the go-to address for honest, ingredient-led manchego cuisine since 1981. The dining room is unfussy and the menu reads like a love letter to the meseta — pisto manchego, morteruelo, gazpacho manchego (the meaty, bread-thickened kind, nothing like the cold soup) and slow-roasted lamb.
What to Order: The Manchego Canon
Start with the morteruelo — a rich, dark pâté of game meat, liver and spices that is one of the most distinctive dishes of Cuenca and Albacete provinces. It arrives on toast and pairs beautifully with the house Manchuela red. Follow it with gazpacho manchego, the warming hunter's stew of flatbread, rabbit and partridge that has absolutely nothing in common with the Andalusian cold soup beyond a shared name.
For mains, the lechazo al horno (wood-roasted suckling lamb) is ordered by the half-rack and arrives crackling and falling off the bone. Finish with a generous slice of marzipan tart — Albacete's confectionery tradition is as strong as its knife-making one.
The Wine List & Manchuela DO
The wine list leans heavily into the Manchuela DO, the small but exciting appellation that straddles Albacete and Cuenca provinces. Look for bottles made from Bobal, the thick-skinned local grape that produces deep, spicy reds with excellent value for money — you'll rarely find them outside Spain.
Nuestro Bar fills up fast for Sunday lunch, when local families occupy every table for a two-hour ritual. Book ahead for weekends; weekday lunchtimes are more relaxed and the fixed menú del día (around €14) is one of the best-value meals in the city.
