Rafa's Restaurant (Restaurante Rafa's)

Restaurante Rafa's on Carrer Sant Elm is a Roses institution with a global reputation built almost entirely on one ingredient: the gamba de Roses, a deep-water prawn with coral-red shells and flesh so sweet and briny it barely needs cooking. Ferran Adrià, who ran elBulli just up the coast, called it one of the finest ingredients in the world.

What to order and how to eat it

The menu is short and deliberately so. Order the gambas a la plancha — grilled on a flat iron plate with nothing but sea salt — and resist any urge to add lemon or sauce. The protocol here is to twist off the head, suck the juices from it immediately (this is not optional; it is the point), then peel the body and eat it in one or two bites while it is still warm.

Beyond the prawns, the kitchen excels with local red mullet, grilled cuttlefish and a simple but excellent fideuà — the Catalan cousin of paella made with short noodles instead of rice, served with a rust-coloured alioli on the side.

The atmosphere and when to visit

Rafa's is a no-frills room: paper tablecloths, fluorescent lights, a noisy open kitchen and tables packed close together. The magic is entirely in the plate. Locals and chefs from across Europe sit elbow to elbow here, which is the highest possible endorsement.

Book at least two weeks ahead for July and August; walk-ins at lunch on a Tuesday or Wednesday in shoulder season (May–June, September) are more realistic. The restaurant is closed on Mondays.
