Trattoria Il Borghetto
Tucked along one of Palestrina's narrow medieval lanes just off Piazza Regina Margherita, Il Borghetto is the kind of family-run trattoria that travel writers keep quiet about: hand-rolled pasta, slow-braised local meats and a short wine list anchored in Cesanese del Piglio — the robust red grape of the Lazio hills. Lunch here is the best 20 euros you'll spend in the province.
What to Order
Start with the antipasto della casa — a rotating spread of local cured meats, aged pecorino romano, marinated olives and bruschetta rubbed with the season's olive oil from nearby Zagarolo groves. It arrives without ceremony and disappears fast.
For the primo, the fettuccine al ragù di cinghiale (wild boar ragu) is the dish that regulars return for: thick ribbons of egg pasta coated in a dark, wine-deep sauce that has been simmering since early morning. In autumn, porcini mushrooms from the Lepini hills join the pot.
The secondo leans on the traditions of Ciociaria — the broader hill-country culture surrounding Palestrina. Abbacchio alla cacciatora (hunter-style lamb with rosemary, white wine and anchovy) is the Sunday classic; on weekdays look for slow-cooked pork ribs with local herbs.
The Wine and the Atmosphere
Ask for a carafe of house Cesanese — grown just 30 kilometres south in the Piglio DOC zone, this tannic, cherry-dark red is the perfect partner for the rich meat dishes and remains almost unknown outside Lazio, making every glass feel like a small discovery.
The dining room is low-ceilinged, stone-walled and lit by bare bulbs; in summer a handful of tables spill onto the cobbled lane outside. Lunch service is the main event — arrive by 13:00 to be sure of a table without a reservation.
Owners and staff speak limited English but communicate entirely through generous pours and attentive plate-watching; the moment your fork slows, a fresh basket of bread materialises.
