The cheese stalls are the market's centrepiece: wheels of Ossau-Iraty at various stages of ageing, fresh tomme de brebis still dripping whey, and occasionally a raw-milk Bethmale from the Ariège. Producers often offer tastings without any pressure to buy, so work your way along the row before committing.

Charcuterie from the Bigorre black pig (Porc Noir de Bigorre, another local AOC product) appears in the form of jambon, saucisson sec and pâté. The Bigorre black pig is related to the Iberian pig and the cured ham is genuinely comparable to a good Ibérico — rich, nutty and deeply marbled.

The Setting & Atmosphere

Luz-Saint-Sauveur is a handsome village in its own right, and the market spills around the Église Saint-André, a fortified Romanesque church built by the Knights Hospitaller in the 12th century and ringed by a crenellated wall that once served as a refuge during raids. Shopping here feels like a history lesson you didn't expect.

Arrive before 9:30 for the best selection and the liveliest atmosphere; by 11:30 the stalls begin packing up. The café terraces on the square are perfect for a post-market coffee and people-watching.

Getting There from Barèges

The D918 road from Barèges to Luz-Saint-Sauveur descends 8 kilometres through the Gorge de Luz, a narrow canyon where the road clings to the cliff above the Bastan torrent. It is a spectacular drive or cycle, taking around 15 minutes by car.

A local bus (Réseau Pyrénées) connects Barèges and Luz-Saint-Sauveur several times daily in summer; the journey is short and the fare minimal, making it easy to leave the car behind and carry back a basket of cheese and charcuterie on foot.
